Pollo alla Cacciatora (Chicken Hunter's Stew)

Ingredients

  • 1.2 kg chicken pieces (thighs and drumsticks work best)
  • 3 tbsp extra virgin olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 400g ripe tomatoes, chopped (or a 400g tin of chopped tomatoes)
  • 150 ml red wine
  • 1 bay leaf
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • Salt and freshly ground black pepper
  • Optional: a handful of pitted green olives

Instructions

  1. Heat the olive oil in a large, heavy-based pan over medium-high heat. Brown the chicken pieces on all sides, then remove and set aside.
  2. Add the chopped onion and garlic to the pan and sauté until softened and lightly golden.
  3. Return the chicken to the pan, then add the chopped tomatoes and red wine. Stir well, scraping up any browned bits from the base.
  4. Add the bay leaf, rosemary, and thyme. Season with salt and pepper to taste. If using, stir in the green olives.
  5. Bring the mixture to a simmer, cover with a lid, and cook on low heat for about 1 to 1.5 hours, or until the chicken is tender and the flavours have melded beautifully.
  6. Adjust the seasoning if necessary and remove the bay leaf and herb sprigs before serving.
  7. Serve hot, ideally with a side of rustic bread or creamy polenta to soak up the delicious sauce.
