Pollo alla Cacciatora (Chicken Hunter's Stew)
Ingredients
- 1.2 kg chicken pieces (thighs and drumsticks work best)
- 3 tbsp extra virgin olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 400g ripe tomatoes, chopped (or a 400g tin of chopped tomatoes)
- 150 ml red wine
- 1 bay leaf
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- Salt and freshly ground black pepper
- Optional: a handful of pitted green olives
Instructions
- Heat the olive oil in a large, heavy-based pan over medium-high heat. Brown the chicken pieces on all sides, then remove and set aside.
- Add the chopped onion and garlic to the pan and sauté until softened and lightly golden.
- Return the chicken to the pan, then add the chopped tomatoes and red wine. Stir well, scraping up any browned bits from the base.
- Add the bay leaf, rosemary, and thyme. Season with salt and pepper to taste. If using, stir in the green olives.
- Bring the mixture to a simmer, cover with a lid, and cook on low heat for about 1 to 1.5 hours, or until the chicken is tender and the flavours have melded beautifully.
- Adjust the seasoning if necessary and remove the bay leaf and herb sprigs before serving.
- Serve hot, ideally with a side of rustic bread or creamy polenta to soak up the delicious sauce.
