Cavallotto Barolo Riserva Bricco Boschis Vigna San Giuseppe comes from a single steep parcel behind the family cellar that is widely held to be the heart of the Bricco Boschis cru.
Barolo lies in the Langhe hills of Piedmont, where Nebbiolo ripens slowly on marl and limestone to give wines of firm tannin and great longevity. Cavallotto has farmed Bricco Boschis in Castiglione Falletto for four generations and bottles this Riserva only from Vigna San Giuseppe, a 3.7-hectare parcel on the steep slope behind the cantina. The site has moderate altitude and good drainage, while clay in the subsoil holds enough water to keep the vines from stress in dry seasons. The soils mix blue-tinted clay, which lends power, with limestone for freshness and sand for perfume. Vines here are around 60 years old, carry unusually small bunches and face south-west. The wine spent 28 days on skins and five years in large cask.
Cellar for a decade or more, then serve at 16-18C with roast veal, hare ragu or hard alpine cheese.
