Terrine de Légumes (Vegetable Terrine)
Ingredients:
- 2 zucchinis, thinly sliced
- 2 carrots, thinly sliced
- 1 red capsicum, roasted and peeled
- 200g ricotta cheese
- 3 eggs
- 100ml cream
- Salt, pepper, and fresh basil to taste
Instructions:
- Preheat oven to 180°C. Line a loaf tin with baking paper.
- Blanch the zucchini and carrot slices for 2 minutes, then drain and cool.
- Whisk eggs, cream, and ricotta together. Season with salt, pepper, and chopped basil.
- Layer vegetables in the tin, alternating colours and spreading a bit of the egg mixture between each layer.
- Bake for 40–45 minutes until set. Cool slightly before slicing.
- Serve warm or chilled with a glass of Cave De Tain Viognier.
