Recipe

Terrine de Légumes (Vegetable Terrine)

Ingredients:

  • 2 zucchinis, thinly sliced
  • 2 carrots, thinly sliced
  • 1 red capsicum, roasted and peeled
  • 200g ricotta cheese
  • 3 eggs
  • 100ml cream
  • Salt, pepper, and fresh basil to taste

Instructions:

  1. Preheat oven to 180°C. Line a loaf tin with baking paper.
  2. Blanch the zucchini and carrot slices for 2 minutes, then drain and cool.
  3. Whisk eggs, cream, and ricotta together. Season with salt, pepper, and chopped basil.
  4. Layer vegetables in the tin, alternating colours and spreading a bit of the egg mixture between each layer.
  5. Bake for 40–45 minutes until set. Cool slightly before slicing.
  6. Serve warm or chilled with a glass of Cave De Tain Viognier.
