Description

Les Chambines gives Benjamin Benoit's palest and most delicate Ploussard, from a slope so steep it has to be ploughed by horse.

The lieu-dit is wedged between La Rouge and Les Charots, on red chalky clay, and at 0.6 hectares it is Benoit's largest parcel of the variety. The vines were planted in the mid-1980s on a slope that reaches 40 degrees in places, which rules out tractors. Facing more to the west, the site ripens gently and the wine is usually bottled at around 10.5 to 11% alcohol. Poulsard, known in Pupillin as Ploussard, is thin-skinned and naturally pale, and nothing in the cellar here works against that: the fruit was destemmed by hand, fermentation was spontaneous, and maturation took place in a steel vat with no oak at all. The result sits at the gossamer end of the variety, all red currant and pomegranate with a dainty spice and clean, refreshing acidity.

Drink over the next four years, lightly chilled at 14-15°C, with charcuterie, roast chicken or a plate of Comté.
