Recipe

Wild Mushroom Risotto

Ingredients:

  • 1 1/2 cups Arborio rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups mixed mushrooms, sliced
  • 1/2 cup dry white wine
  • 4 cups vegetable stock
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a pan. Sauté onion and garlic until soft.
  2. Add mushrooms and cook until browned. Stir in Arborio rice and cook for 1-2 minutes.
  3. Deglaze with white wine and gradually add vegetable stock, stirring continuously.
  4. Once rice is creamy and al dente, stir in Parmesan cheese and season to taste.
