Description
Champagne Pascal Agrapart Grand Cru EXP Blanc de Blancs, formerly called Expérience, is made without any addition of sugar at any stage.
In 2002 Pascal Agrapart sought and, remarkably, received permission from the local authorities to experiment with a small quantity of wine made with no sugar additions at all: no chaptalisation, none in the liqueur de tirage that prompts the second fermentation, and none in the final dosage. Using must rather than sugar and yeast for the tirage runs against AOC law, which is why permission was needed, and it means the wine is made solely from estate-grown grapes in Avize and its neighbours. One consequence is lower alcohol, around 11.8 per cent against roughly 13 for the rest of the range, because the second fermentation does not lift alcohol by the usual degree and a half. It is a difficult style to make and quantities are tiny, which explains the price and the scarcity.
A wine that ages well and suits the table; serve at 8°C with white fish, roast chicken or a plate of hard cheeses.
