Fidèle is Vouette et Sorbée's blanc de noirs, a zero-dosage grower Champagne made entirely from Pinot Noir grown on Kimmeridgian limestone.

The estate works in the Côte des Bar, the southern outpost of Champagne that sits closer to Chablis than to Reims, where Kimmeridgian marl gives Pinot Noir a distinctive chalky bite. This release is built on the 2018 harvest with roughly 5 per cent reserve wine from a perpetual blend held in two large old foudres and started in 2006; the dominant harvest is always marked on the back label with an R, short for récolte. The Fonnet vineyard, in a small enclosed valley, forms the heart of the cuvée, with Sorbée providing much of the balance and Châtel, a rocky limestone site with vines of more than twenty years, topping it up. Average vine age is around 30 years. After pressing in a traditional vertical Coquard press, the wine was fermented without added yeast or chaptalisation in used Burgundian barrels for ten months, then held 15 to 20 months on lees in bottle and disgorged with no dosage.

Drinking well now and will develop for several years yet; serve at about 8°C with oysters, charcuterie or roast chicken.
