- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 sprig rosemary, finely chopped (plus extra for garnish)
- 1 cup red wine (preferably a portion of Château Coufran Haut-Médoc 2018 or a similar Bordeaux blend)
- 1/2 cup lamb stock
- 1 shallot, finely chopped
- 1 tsp Dijon mustard (optional)
Instructions:
- Preheat your grill to medium-high heat.
- Season the lamb chops generously with salt and pepper, then rub with olive oil, minced garlic, and chopped rosemary.
- Grill the lamb chops for about 4 minutes per side for medium-rare, or adjust to your preferred doneness.
