A classic expression of Fleurie’s floral, light-footed style, this Château de La Chaize is an elegant Beaujolais made from 100% Gamay. The wine comes from a stunning 17th-century classified French national heritage site that’s been producing great Beaujolais since 1676, with vineyards now farmed organically and Fleurie certified organic from the 2023 vintage onwards.
Fragrant aromas of crushed raspberry, strawberry and morello cherry mingle with peony, violet and rose petal. Fresh and juicy on the palate, with a supple texture, silky tannins and bright acidity, it finishes clean and savoury with a subtle mineral lift. Beautiful lightly chilled, and a refined alternative to Pinot Noir.

Saumon en Papillote (Salmon Baked in Paper with Herbs & Lemon)
Ingredients:
- 4 salmon fillets
- 1 lemon, thinly sliced
- 2 tbsp olive oil
- 1 small handful fresh dill or parsley
- Salt and cracked white pepper
Instructions:
- Preheat the oven to 180°C and prepare four large sheets of baking paper.
- Place a salmon fillet in the centre of each sheet and season lightly with salt and white pepper.
- Drizzle with olive oil, top with lemon slices and scatter over fresh herbs.
- Fold the paper over the fish and seal the edges to form a parcel.
- Bake for 15–18 minutes until the salmon is just cooked and tender.
- Open the parcels carefully and serve immediately.
