Recipe

Filetto di Manzo al Pepe Verde (Beef Tenderloin with Green Peppercorn Sauce)

Ingredients:

  • 4 beef tenderloin steaks (200-250g each)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons green peppercorns, crushed
  • 1/2 cup brandy
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Roast potatoes or sautéed greens (for serving)

Instructions:

  1. Preheat your grill or a large skillet to medium-high heat. Season the beef tenderloin steaks with salt and freshly ground black pepper on both sides.
  2. Heat the olive oil in the skillet or on the grill, and cook the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove the steaks from the pan and let them rest for 5 minutes.
  3. While the steaks are resting, melt the butter in the same skillet over medium heat. Add the crushed green peppercorns and cook for 1-2 minutes to release their flavour.
  4. Carefully add the brandy to the pan, allowing it to bubble and cook off the alcohol for 1-2 minutes.
  5. Stir in the heavy cream and Dijon mustard. Bring the sauce to a simmer and let it cook for 3-4 minutes, or until the sauce thickens to your desired consistency. Season with salt and pepper to taste.
  6. Serve the beef tenderloin steaks on plates and spoon the green peppercorn sauce over the top. Garnish with freshly chopped parsley.
  7. Pair with a glass of **Château De La Dominique Relais de la Dominique St. Emilion Grand Cru 2016**, allowing the full-bodied, elegant character of the wine to complement the rich, creamy sauce and the tender beef.
