Description
Château de Pez is a Saint-Estèphe from one of the oldest estates in the northern Médoc.
Pez is a hamlet within Saint-Estèphe, and the property that carries its name has been documented since the fifteenth century, making it one of the earliest vineyards established in the Médoc, well before the great classified estates took shape. Saint-Estèphe sits at the northern end of the peninsula, where the gravel banks thin and clay comes closer to the surface; the wines are correspondingly firm and slow to mature, built on Cabernet Sauvignon and Merlot with smaller amounts of Petit Verdot and Cabernet Franc. Château de Pez has belonged to the Champagne house Louis Roederer since 1995, and both vineyard and cellar have been substantially reworked since.
Decant it and serve at around 17 degrees with roast lamb or beef; it is built to age, and a decade in the cellar is well spent.
