Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper, to taste
  • Optional: 1/4 cup crumbled vegan feta

Instructions:

  1. In a medium saucepan, combine the quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the liquid is absorbed and the quinoa is fluffy. Let cool slightly.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well emulsified.
  4. Drizzle the vinaigrette over the salad and toss gently until all ingredients are evenly coated. If using, fold in the vegan feta.
