Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp extra-virgin olive oil
- Salt and pepper, to taste
- Optional: 1/4 cup crumbled vegan feta
Instructions:
- In a medium saucepan, combine the quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the liquid is absorbed and the quinoa is fluffy. Let cool slightly.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and fresh parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well emulsified.
