Ingredients (Serves 4):
- 2kg fresh mussels, cleaned and debearded
- 2 tbsp butter
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1 cup dry white wine
- 1/4 cup parsley, chopped
- 1 tbsp fresh thyme leaves
- 1 bay leaf
- Salt and pepper, to taste
- Lemon wedges, for serving
- Crusty French bread, for dipping
Instructions:
- Prepare Mussels: Rinse the mussels thoroughly under cold water, discarding any that are open or cracked. Set aside.
- Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the shallots and garlic, cooking until fragrant and softened, about 2 minutes.
- Add Wine and Herbs: Pour in the white wine, and add parsley, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer.
- Cook Mussels: Add the mussels to the pot, cover with a lid, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels open. Discard any mussels that do not open.
- Serve: Transfer the mussels to a serving bowl, spoon the broth over the top, and garnish with additional parsley. Serve with lemon wedges and crusty French bread for dipping.
