Mussels à la Bordelaise (Moules à la Bordelaise)

Ingredients (Serves 4):

  • 2kg fresh mussels, cleaned and debearded
  • 2 tbsp butter
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 1/4 cup parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Crusty French bread, for dipping

Instructions:

  1. Prepare Mussels: Rinse the mussels thoroughly under cold water, discarding any that are open or cracked. Set aside.
  2. Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the shallots and garlic, cooking until fragrant and softened, about 2 minutes.
  3. Add Wine and Herbs: Pour in the white wine, and add parsley, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer.
  4. Cook Mussels: Add the mussels to the pot, cover with a lid, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels open. Discard any mussels that do not open.
  5. Serve: Transfer the mussels to a serving bowl, spoon the broth over the top, and garnish with additional parsley. Serve with lemon wedges and crusty French bread for dipping.
