Château La Négly L’Ancily Old Vine Mourvèdre/Grenache is a powerful and racy red wine from Languedoc, France. This sublime cuvée expresses the full potential of old vines planted in the estate’s finest plots. It offers deep, concentrated aromas of dark berries, plum, garrigue herbs, and spice. The palate is rich and structured, with silky tannins and a beautiful persistence that lingers long after each sip. A bold and elegant southern French red of great intensity and finesse.

Recipe

Gardianne de Taureau (Camargue Bull Stew)

Ingredients:

  • 1.5kg bull or beef meat, cubed
  • 2 onions, chopped
  • 2 carrots, sliced
  • 3 garlic cloves, crushed
  • 750mL red wine
  • 1 orange zest strip
  • 1 bouquet garni (bay, thyme, rosemary)
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  • Black olives (optional)

Instructions:

  1. Marinate meat overnight with wine, herbs, orange zest, and vegetables.
  2. Drain and sear meat in olive oil until browned. Set aside.
  3. Sauté vegetables, stir in tomato paste, and return meat to the pot with marinade.
  4. Simmer on low for 3–4 hours until tender. Add olives if desired.
  5. Serve with Camargue rice and a glass of Château La Négly L'Ancily Old Vine Mourvèdre/Grenache for a classic southern French experience.
