Tarte à la Tomate (Provençal Tomato Tart)
Ingredients (Serves 4):
- 1 sheet puff pastry
- 3–4 ripe tomatoes, sliced
- 2 tbsp Dijon mustard
- 100g grated Gruyère or Emmental cheese
- 2 tbsp olive oil
- 1 tsp dried Herbes de Provence
- Salt and pepper
Instructions:
- Preheat the oven to 200°C and place the puff pastry on a baking tray lined with paper.
- Spread the Dijon mustard evenly over the pastry, leaving a small border around the edges.
- Sprinkle the grated cheese over the mustard, then arrange the tomato slices neatly on top.
- Drizzle with olive oil, season with salt and pepper and scatter over the Herbes de Provence.
- Bake for 20–25 minutes until the pastry is golden and the tomatoes are soft and lightly caramelised.
The savoury pastry, ripe tomatoes and Provençal herbs are a natural match for this crisp, delicate rosé, highlighting its strawberry, citrus and floral notes.
