Salade de Fruits de Mer (Seafood Salad)
Ingredients:
- 200g cooked prawns, peeled
- 200g cooked mussels, shelled
- 1 small cucumber, diced
- 200g cherry tomatoes, halved
- 1 small red onion, finely sliced
- 2 tbsp capers
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions:
- In a large bowl, combine prawns, mussels, cucumber, cherry tomatoes, red onion, and capers.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the seafood and vegetables, tossing gently to coat evenly.
- Chill for 15-20 minutes to allow flavours to meld.
- Serve garnished with fresh parsley.
