- 1.5 kg beef short ribs
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 large onion, roughly chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 750mL Château Massereau Bordeaux Supérieur 2022 (or a similar Bordeaux blend)
- 2 cups beef or vegetable stock
- 2 tbsp tomato paste
- 1 sprig rosemary
- 2 sprigs thyme
- 1 bay leaf
Instructions:
- Preheat your oven to 160°C.
- Season the beef short ribs generously with salt and pepper. In a heavy, ovenproof pot, heat the olive oil over medium-high heat and sear the ribs on all sides until deeply browned. Remove and set aside.
- Add the chopped onion, garlic, carrots, and celery to the pot and sauté until softened, about 5 minutes.
- Stir in the tomato paste and cook for an additional 2 minutes.
- Return the short ribs to the pot, then add the red wine, beef (or vegetable) stock, rosemary, thyme, and bay leaf. Bring the mixture to a gentle simmer.
- Cover the pot and transfer it to the preheated oven. Braise slowly for 3–4 hours until the ribs are tender and the sauce has reduced to a rich, flavorful jus.
- Remove the ribs and strain the sauce. Adjust seasoning with salt and pepper if needed.
- Plate the short ribs, drizzle with the red wine reduction, and garnish with fresh herbs.
