Quiche aux Légumes (Vegetable Quiche)
Ingredients:
- 1 sheet of puff pastry
- 3 eggs
- 200mL cream
- 100g grated Gruyère cheese
- 1 zucchini, thinly sliced
- 1 red capsicum, diced
- 1 onion, finely chopped
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh thyme for garnish
Instructions:
- Preheat oven to 180°C. Line a tart tin with puff pastry and trim excess. Prick the base with a fork.
- In a pan, heat olive oil and sauté onion, zucchini, and capsicum until softened. Allow to cool slightly.
- In a bowl, whisk eggs and cream. Season with salt and pepper.
- Spread the sautéed vegetables over the pastry base. Pour the egg mixture on top and sprinkle with Gruyère cheese.
- Bake for 30-35 minutes or until golden and set. Garnish with fresh thyme before serving.
Tip: Serve warm or at room temperature with a side salad.
