Recipe

Quiche aux Légumes (Vegetable Quiche)

Ingredients:

  • 1 sheet of puff pastry
  • 3 eggs
  • 200mL cream
  • 100g grated Gruyère cheese
  • 1 zucchini, thinly sliced
  • 1 red capsicum, diced
  • 1 onion, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh thyme for garnish

Instructions:

  1. Preheat oven to 180°C. Line a tart tin with puff pastry and trim excess. Prick the base with a fork.
  2. In a pan, heat olive oil and sauté onion, zucchini, and capsicum until softened. Allow to cool slightly.
  3. In a bowl, whisk eggs and cream. Season with salt and pepper.
  4. Spread the sautéed vegetables over the pastry base. Pour the egg mixture on top and sprinkle with Gruyère cheese.
  5. Bake for 30-35 minutes or until golden and set. Garnish with fresh thyme before serving.

Tip: Serve warm or at room temperature with a side salad.
