Château Peybonhomme-Les-Tours Le Blanc Bonhomme is a biodynamic white Bordeaux released, deliberately, in a Burgundy-shaped bottle.
Blaye-Côtes de Bordeaux faces the Médoc across the Gironde and sits on limestone and clay-limestone rather than gravel. Château Peybonhomme-Les-Tours is among the region's biodynamic pioneers, and Guillaume Hubert draws this white from a two-hectare parcel close to the riverbank: forty-five per cent Sémillon, forty-five per cent Sauvignon Blanc and ten per cent Colombard. The grapes are handpicked and sorted by hand, then given a twenty-four-hour carbonic period before pressing into a mixture of concrete vats and oak barrels, where fermentation finishes on indigenous yeasts alone. Very little is done to the wine after that, and the limestone comes through as crunchy freshness and a juicy, saline texture rather than the waxy weight long associated with white Bordeaux. The name Bonhomme shares a root with bonhomie, the French word for warm good humour, which suits the wine.
Ready now and worth keeping three or four years. Serve at 10-12°C with oysters, grilled fish or a herb-heavy salad.
