Chazalettes & Co. Vermouth de Torino Bianco

Chazalettes Vermouth de Torino Bianco is a Piedmontese white vermouth built on a Moscato base wine.

Vermouth di Torino is a protected designation: the base wine must be Italian, production must take place in Piedmont, and the Artemisia at the heart of the recipe should where possible be grown in the region. Chazalettes, a Turin house of nineteenth-century origin revived in recent years, ferments its Moscato base to relative dryness so that a slight bitterness is there to balance the sugar added afterwards. The bianco carries 130 grams per litre of sugar alongside sweet citrus, elderflower, rhubarb, cardamom, coriander, mace, orange, sage and a range of bitter herbs, with Piemontese Artemisia at the centre and gentian and rhubarb providing the bitter counterweight. The style is floral and grapey rather than heavy, which makes it as good neat as it is in a cocktail.

Serve chilled and neat over ice with a twist of lemon, as it was originally intended, or as the base of a white Negroni. It sits well with olives, salted almonds and hard cheese.
