Ratatouille Niçoise (Provençal Vegetable Stew)
Ingredients:
- 1 eggplant, diced
- 1 zucchini, sliced
- 1 red capsicum, chopped
- 1 yellow capsicum, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp herbes de Provence
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
- Heat olive oil in a large pan and sauté garlic and onion until translucent.
- Add eggplant and capsicums, cooking for 5–7 minutes.
- Add zucchini and tomatoes, season with salt, pepper, and herbes de Provence.
- Cover and simmer for 30 minutes until vegetables are tender and flavours meld.
- Garnish with basil and serve warm with a glass of Clos Sainte Magdeleine Cassis Rosé for a classic coastal pairing.
