Commune of Buttons Blanc de Blancs Method Ancestral Sparkling is a bottle-fermented Chardonnay sparkling from the Adelaide Hills.
Every grape is Chardonnay from the Kas Sluiter vineyard at Mylor, picked at ten per cent potential alcohol and pressed gently — only juice from the first half of the press cycle was kept, which is where the purity comes from. After a cool, slow wild ferment, fresh Chardonnay juice from the last pick of harvest was added to lift residual sugar to 20 grams per litre before bottling, so the second ferment runs on that. Twenty-four months on lees followed, with disgorgement in March 2024, considerably longer than most méthode ancestrale wines are given.
Pretty flavours over a tight frame with a light, creamy bead, and brioche richness from the time in bottle balancing a fresh acid spine. Serve at 7 degrees. Oysters, fried whitebait, or a wedge of comté to open the evening.
