Denton Cabernet Sauvignon 2021

Denton Cabernet Sauvignon is a single-site Yarra Valley Cabernet made in an early-drinking style.

The Cabernet sits high on the north-western slope of View Hill, the warmest corner of a cone-shaped property where sandy topsoil lies over hulking granite boulders. That warmth counts for Cabernet in a region better known for Pinot Noir and Chardonnay. Picking landed at the end of March, and the fruit went into a wild ferment with no cultured yeast, then straight to old puncheons, seasoned wood with nothing new among it, where it sat quietly until bottling the following February. The whole approach is aimed at freshness and drinkability now, not a long sit in the cellar.

Blackcurrant and bay leaf, a graphite streak, and tannins that are present but pliable. Give it 30 minutes in the glass and serve at 16 to 18 degrees. Lamb cutlets off the grill, a steak sandwich, or hard cheese and quince paste.
