Penne al Ragù di Agnello (Penne with Lamb Ragu)
Ingredients:
- 400g penne pasta
- 300g ground lamb
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 400g canned diced tomatoes
- 1 tbsp tomato paste
- 3 tbsp olive oil
- 1/2 cup red wine
- 1 tsp dried rosemary
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a pan over medium heat. Sauté the onion and garlic until softened.
- Add the ground lamb and cook until browned. Stir in tomato paste and cook for 2 minutes.
- Deglaze with red wine, then add canned tomatoes, rosemary, salt, and pepper. Simmer for 20 minutes.
- Cook the penne in salted boiling water until al dente. Drain and toss with the lamb ragu.
- Serve hot, garnished with fresh parsley.
