Recipe

Penne al Ragù di Agnello (Penne with Lamb Ragu)

Ingredients:

  • 400g penne pasta
  • 300g ground lamb
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 400g canned diced tomatoes
  • 1 tbsp tomato paste
  • 3 tbsp olive oil
  • 1/2 cup red wine
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a pan over medium heat. Sauté the onion and garlic until softened.
  2. Add the ground lamb and cook until browned. Stir in tomato paste and cook for 2 minutes.
  3. Deglaze with red wine, then add canned tomatoes, rosemary, salt, and pepper. Simmer for 20 minutes.
  4. Cook the penne in salted boiling water until al dente. Drain and toss with the lamb ragu.
  5. Serve hot, garnished with fresh parsley.
