Dodd's Organic Gin 500ml

Dodd's Organic Gin is an organic London gin, bottled at 500ml.

Two stills, used for different jobs, are the heart of this gin. The bulk of the botanicals is distilled in Christina, a 140-litre copper alembic, and the fragile ones are handled separately in Little Albion, a purpose-built cold vacuum still that works at low temperature so nothing gets cooked. The two spirits then sit together for several weeks before bottling. First made in 2013 and named for the engineer Ralph Dodd, it remains one of the best Martini gins around, with honey collected from London beehives lending body. Labels are letterpress printed and individually numbered by hand. The 500ml format is the pouring size.

Lime zest and bay arrive first, then a cushioned palate where honey takes the edge off the earthy, menthol side of juniper and angelica, and a perfumed finish of lime blossom, jasmine and cardamom. Stir it into a Martini, or lengthen it with tonic and a wedge of lime.
