Domaine Abbaye de Santenay Bourgogne Hautes Côtes de Beaune is a red Burgundy from the hills that rise behind the famous slope, made entirely from Pinot Noir.
The Hautes Côtes de Beaune is the higher country west of the Côte d'Or proper, a scattering of vineyards on cooler ground between roughly three hundred and four hundred metres, behind villages such as Meursault, Pommard and Santenay. It was recognised as its own regional appellation in 1961, and for a long time it was where Burgundy grew the wine it drank itself rather than the wine it sold. Warmer seasons have changed that arithmetic considerably, and the altitude that once made ripening a struggle is now counted an advantage. Pinot Noir is the only red grape permitted, and the wines are generally made with a light hand and modest oak.
Serve a little cool, at around 15 degrees, with charcuterie, roast poultry or a mushroom tart; drink it young to middling rather than cellaring at length.
