Recipe

Lapin au Pinot Noir (Rabbit in Pinot Noir)

Ingredients:

  • 1.2kg rabbit pieces (legs, shoulders, or cut into chunks)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 150g mushrooms, sliced
  • 1 cup Pinot Noir ('Grand P' recommended)
  • 1 cup chicken stock
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions:

  1. Heat butter and olive oil in a heavy-based casserole dish over medium-high heat. Season the rabbit pieces with salt and pepper, then brown on all sides. Remove and set aside.
  2. In the same dish, sauté onion, garlic, carrot, and mushrooms until lightly browned.
  3. Deglaze with the Pinot Noir, scraping up any browned bits at the bottom of the dish. Return the rabbit to the pot and add the chicken stock and thyme.
  4. Bring to a gentle simmer, reduce heat to low, cover, and cook for 45 minutes or until the rabbit is tender.
  5. Taste and adjust seasoning. Garnish with chopped parsley and serve with crusty bread or mashed potatoes.
