Lapin au Pinot Noir (Rabbit in Pinot Noir)
Ingredients:
- 1.2kg rabbit pieces (legs, shoulders, or cut into chunks)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 onion, finely sliced
- 2 garlic cloves, minced
- 1 carrot, chopped
- 150g mushrooms, sliced
- 1 cup Pinot Noir ('Grand P' recommended)
- 1 cup chicken stock
- 2 sprigs fresh thyme
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions:
- Heat butter and olive oil in a heavy-based casserole dish over medium-high heat. Season the rabbit pieces with salt and pepper, then brown on all sides. Remove and set aside.
- In the same dish, sauté onion, garlic, carrot, and mushrooms until lightly browned.
- Deglaze with the Pinot Noir, scraping up any browned bits at the bottom of the dish. Return the rabbit to the pot and add the chicken stock and thyme.
- Bring to a gentle simmer, reduce heat to low, cover, and cook for 45 minutes or until the rabbit is tender.
- Taste and adjust seasoning. Garnish with chopped parsley and serve with crusty bread or mashed potatoes.
