Recipe

Lapin au Pinot Noir (Rabbit in Pinot Noir)

Ingredients:

  • 1.2kg rabbit pieces (legs, shoulders, or cut into chunks)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 150g mushrooms, sliced
  • 1 cup Pinot Noir ('Grand P' recommended)
  • 1 cup chicken stock
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions:

  1. Heat the butter and olive oil in a large, heavy-based casserole dish over medium-high heat. Season the rabbit pieces with salt and pepper, then brown them on all sides. Remove and set aside.
  2. In the same dish, sauté onion, garlic, carrot, and mushrooms until lightly golden.
  3. Deglaze with the Pinot Noir, scraping up any browned bits from the bottom. Return the rabbit to the pot, then add chicken stock and thyme.
  4. Bring to a simmer, reduce the heat to low, cover, and cook for about 45 minutes or until the rabbit is tender.
  5. Adjust seasoning, garnish with chopped parsley, and serve with crusty bread or creamy mashed potatoes.
