Daube de Boeuf à la Provençale (Provençal Beef Stew)
Ingredients:
- 1.5kg beef chuck, cut into large cubes
- 2 onions, sliced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 1 bottle dry red wine (preferably Rhône)
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 orange, zest only
- 1 bay leaf
- 1 sprig thyme
- Salt and pepper, to taste
- Black olives (optional)
Instructions:
- Marinate beef, onions, garlic, orange zest, and herbs in wine overnight in the fridge.
- Preheat oven to 160°C. Remove meat and pat dry. Brown in olive oil, then remove.
- Sauté onions and carrots until soft. Add tomato paste and cook briefly.
- Return beef to pot, add strained marinade, and bring to a simmer.
- Cover and braise in the oven for 3 hours or until beef is tender. Add olives during final 30 minutes, if using.
