Daube Provençale (Provencal Beef Stew)
Ingredients:
- 1kg beef chuck, cut into large cubes
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 500ml red wine (preferably Rhône)
- 2 tbsp olive oil
- 1 bay leaf
- 1 sprig of thyme
- Salt and pepper, to taste
- Black olives (optional)
Instructions:
- Heat olive oil in a large pot. Brown the beef cubes on all sides, then remove and set aside.
- Add chopped onion, carrot, and garlic to the pot, cooking until softened.
- Stir in tomato paste and cook for 2 minutes. Return beef to the pot.
- Pour in the red wine, add bay leaf and thyme. Season with salt and pepper.
- Cover and simmer on low heat for 3 hours, until the meat is tender. Add olives in the final 30 minutes, if using.
- Serve hot with crusty bread or mashed potatoes and a glass of Domaine André Perret St Joseph Rouge 'Les Grisieres'.
