Ragoût de Sanglier (Wild Boar Stew)
Ingredients:
- 1kg wild boar shoulder, cubed
- 2 onions, chopped
- 2 carrots, sliced
- 2 garlic cloves, minced
- 500ml red wine (Syrah preferred)
- 2 tbsp tomato paste
- 1 bouquet garni
- Olive oil, salt, and pepper
- Optional: mushrooms, black olives
Instructions:
- Marinate the boar overnight in red wine with bouquet garni, garlic, and onions.
- Drain and brown the meat in olive oil. Set aside.
- Sauté carrots and reserved onions in the same pot. Add tomato paste and return meat.
- Pour in marinade, cover, and simmer for 2.5–3 hours until tender.
- Optional: Add mushrooms or olives in the last 30 minutes. Serve with mashed potatoes and a glass of 'Les Grisieres' Syrah.
