Recipe

Gigot d'Agneau à la Provençale (Provençal Roast Leg of Lamb)

Ingredients:

  • 1.5kg leg of lamb
  • 4 garlic cloves, sliced
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp Herbes de Provence
  • Salt and pepper, to taste
  • 1 glass red wine (Cornas)

Instructions:

  1. Preheat oven to 200°C. Make small incisions in the lamb and insert garlic slices.
  2. Rub with mustard, olive oil, herbs, salt, and pepper.
  3. Roast for 1 hour 30 minutes, basting occasionally with red wine.
  4. Rest before slicing. Serve with roasted vegetables and a glass of Cornas in magnum.
