Domaine Auguste Clape Cornas is an iconic red wine from the steep granite slopes of Cornas, Northern Rhône, France, made exclusively from Syrah. Daube de Boeuf à la Provençale (Beef Stew Provençal Style)
Ingredients:
- 1.2kg beef chuck, cut into large cubes
- 1 bottle red wine (Cornas or other Syrah)
- 2 onions, sliced
- 2 carrots, chopped
- 3 garlic cloves, crushed
- 1 orange zest strip
- 2 tbsp tomato paste
- 1 bouquet garni
- Salt and pepper, to taste
- Olive oil, for browning
- Black olives (optional)
Instructions:
- Marinate beef with wine, vegetables, garlic, zest, and bouquet garni overnight.
- Drain and brown meat in olive oil. Add tomato paste and marinade mixture back to pot.
- Simmer gently for 3–4 hours until meat is tender. Add olives in final 30 minutes if desired.
- Serve hot with mashed potatoes or polenta, alongside a glass of Domaine Auguste Clape Cornas.
