Description

Domaine Auguste Clape Cornas is an iconic red wine from the steep granite slopes of Cornas, Northern Rhône, France, made exclusively from Syrah. This wine delivers precision and power in equal measure, offering a chiseled, textured profile with ample concentration. Aromas of dark cherries, plums, currants, wild herbs, crushed stones, and baking spices lead into a medium-bodied palate layered with purple fruit, white pepper, and violets. Finely grained tannins and bright acidity provide structure and lift, culminating in a long, peppery finish with floral elegance. A benchmark Cornas with intensity, harmony, and verve.

Recipe

Daube de Boeuf à la Provençale (Beef Stew Provençal Style)

Ingredients:

  • 1.2kg beef chuck, cut into large cubes
  • 1 bottle red wine (Cornas or other Syrah)
  • 2 onions, sliced
  • 2 carrots, chopped
  • 3 garlic cloves, crushed
  • 1 orange zest strip
  • 2 tbsp tomato paste
  • 1 bouquet garni
  • Salt and pepper, to taste
  • Olive oil, for browning
  • Black olives (optional)

Instructions:

  1. Marinate beef with wine, vegetables, garlic, zest, and bouquet garni overnight.
  2. Drain and brown meat in olive oil. Add tomato paste and marinade mixture back to pot.
  3. Simmer gently for 3–4 hours until meat is tender. Add olives in final 30 minutes if desired.
  4. Serve hot with mashed potatoes or polenta, alongside a glass of Domaine Auguste Clape Cornas.
