Gardianne de Taureau (Bull Stew from the Camargue)
Ingredients:
- 1kg bull or beef chuck, cubed
- 1 bottle red wine (Côtes du Rhône)
- 2 onions, sliced
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 tbsp olive oil
- 1 bouquet garni
- Salt and pepper, to taste
- Black olives (optional)
Instructions:
- Marinate meat in wine with onions, garlic, carrots, bouquet garni, salt, and pepper overnight in the fridge.
- Drain and reserve marinade. Brown meat in olive oil, then add vegetables and marinade back to the pot.
- Simmer gently for 3 hours or until the meat is tender. Add olives in the final 30 minutes if using.
- Serve with Camargue rice and a glass of Domaine Auguste Clape Côtes du Rhône Syrah.
