Domaine Bernard Baudry Chinon Rosé is made entirely from organically grown Cabernet Franc, pressed straight to juice for a pale colour.
Chinon is Cabernet Franc country, on the gravel terraces and clay-limestone slopes above the Vienne, and the appellation permits rosé as well as red and white. Baudry’s rosé was traditionally drawn from vines on the gravel of Grézeaux and from Les Balais, a parcel on clay and flint planted by Matthieu Baudry’s father around thirty years ago. More recently, to counter warmer seasons, the family have brought in a vineyard high on the Chinon côteaux above their Croix Boissée site; the fruit from those flinty soils now makes up seventy per cent of the blend and brings cut and minerality to the fruit from the valley floor. The wine is hand-picked and made by the pressurage method, taking its delicate colour from minimal skin contact in the press. It ferments almost to dryness with indigenous yeasts, two-thirds in concrete and the rest in stainless steel, and rests on lees with no sulphur added.
Drink over the next two years. Serve at 10-12°C with grilled prawns, chicken salad or charcuterie.
