Domaine Bernard Defaix Chablis Grand Cru Bougros 2017

Bougros is the westernmost of the seven Chablis grand crus, and this is Domaine Bernard Defaix's bottling from that slope.

The grand cru hill rises on the right bank of the Serein above the town of Chablis, on Kimmeridgian marl thick with fossilised oyster shells — the seam that gives Chablis its saline, chalky signature. Bougros lies at the far north-western end of the hill, with deeper soils and a slightly warmer aspect than its neighbours, and tends to give the broadest and most generous of the grand crus rather than the most austere. Domaine Bernard Defaix is a fourth-generation family estate at Milly, about 27 hectares, with Didier Defaix in the vineyards and his brother Sylvain in the cellar; it also holds Vaudésir at grand cru level. Organic conversion began in 2008 under Ecocert and was interrupted in 2016 by mildew. Unlike the village wines, the grand crus are raised in oak barrel with regular lees stirring over twelve to eighteen months.

Best given five years and good for a good deal longer. Serve at 10-12°C with roast turbot, scallops or a mature Comté.
