Recipe

Spiced Lamb Tagine with Apricots

Ingredients:

  • 1.5 kg lamb shoulder, cut into 2-cm cubes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika
  • 400 g diced tomatoes (canned or fresh)
  • 200 g dried apricots, halved
  • 2 cups lamb or vegetable stock
  • 1 tbsp honey (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Season the lamb cubes with salt and pepper. In a large, heavy pot, heat the olive oil over medium-high heat and brown the lamb on all sides. Remove and set aside.
  2. Add the chopped onion and garlic to the pot; sauté until softened, about 4–5 minutes.
  3. Stir in the ground cumin, coriander, cinnamon, and smoked paprika, cooking for 1 minute until fragrant.
  4. Return the lamb to the pot, add the diced tomatoes, dried apricots, and stock. Bring to a gentle simmer.
  5. Cover the pot and let it cook on low heat for 1.5–2 hours until the lamb is tender and the flavors meld. Stir in the honey if desired.
  6. Adjust seasoning with salt and pepper. Garnish with fresh cilantro and serve with lemon wedges.
