Ingredients:
- 1.5 kg lamb shoulder, cut into 2-cm cubes
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp smoked paprika
- 400 g diced tomatoes (canned or fresh)
- 200 g dried apricots, halved
- 2 cups lamb or vegetable stock
- 1 tbsp honey (optional)
- Fresh cilantro, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- Season the lamb cubes with salt and pepper. In a large, heavy pot, heat the olive oil over medium-high heat and brown the lamb on all sides. Remove and set aside.
- Add the chopped onion and garlic to the pot; sauté until softened, about 4–5 minutes.
- Stir in the ground cumin, coriander, cinnamon, and smoked paprika, cooking for 1 minute until fragrant.
- Return the lamb to the pot, add the diced tomatoes, dried apricots, and stock. Bring to a gentle simmer.
- Cover the pot and let it cook on low heat for 1.5–2 hours until the lamb is tender and the flavors meld. Stir in the honey if desired.
- Adjust seasoning with salt and pepper. Garnish with fresh cilantro and serve with lemon wedges.
