Domaine Chermette Crémant de Bourgogne Brut is an all-Chardonnay sparkling wine from a single parcel of vines above the family cellars at Le Bois-d’Oingt.
Crémant de Bourgogne is made by the traditional method across Burgundy, and its southern reach takes in the granite country of the Beaujolais, where the Chermette family is better known for Gamay. The fruit here comes from one 2.5-hectare site facing south-west on limestone and clay just north of the cellars, soils better suited to Chardonnay than to the dark granite that carries the estate’s reds. The wine spends a minimum of 18 months on lees in bottle, sulphur is kept low, and it is neither fined nor filtered. Dosage is a restrained 4 g/L, which leaves the wine dry without stripping it. This shipment blends the 2018, 2019 and 2020 harvests, and the low yields of those years show in the weight and length of the finished wine.
Ready now and good for a further two to three years. Serve at around 8°C as an aperitif, or with oysters, tempura prawns or a plate of jamón.
