Ratatouille alla Provenzale (Provençal Ratatouille)

Ingredients:

  • 2 tablespoons olive oil
  • 1 large eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 4 ripe tomatoes, chopped (or 1 can of diced tomatoes)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish)

Instructions:

  1. In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the eggplant and sauté for 5 minutes, until it starts to soften. Add the zucchini, bell peppers, and onion, and cook for an additional 5–6 minutes, stirring occasionally.
  2. Add the garlic to the pot and cook for another 1–2 minutes, until fragrant.
  3. Stir in the chopped tomatoes, dried thyme, dried oregano, and bay leaf. Season with salt and pepper to taste. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, stirring occasionally, until all the vegetables are tender and the flavours have melded together.
  4. Once the ratatouille is cooked, remove the bay leaf and adjust the seasoning if necessary.
  5. Serve the ratatouille warm, garnished with fresh chopped basil.
