White Fish en Papillote with Lemon and Herbs
Ingredients:
- 2 white fish fillets (such as sole or sea bass), about 150g each
- 1 lemon, thinly sliced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- Fresh thyme and parsley, a few sprigs
- Salt and pepper, to taste
- Parchment paper
Instructions:
- Preheat your oven to 180°C.
- Lay out a sheet of parchment paper for each fillet. Place the fish in the center of the paper and drizzle with olive oil.
- Sprinkle minced garlic, a few sprigs of thyme and parsley, and season with salt and pepper over the fish.
- Lay the lemon slices on top of the fillets. Fold the parchment paper to create a sealed packet.
- Bake in the preheated oven for 12–15 minutes, until the fish is just cooked through and tender.
- Carefully open the packets to release the steam, then transfer the fish to a plate.
