Description
Domaine de Chevalier Rouge G.C.C, 1855 is a classified growth of Pessac-Léognan, grown in a clearing cut out of the pine forest south of Bordeaux.
The estate lies at Léognan, ringed by woodland that keeps it cool, raises the risk of spring frost and pushes the harvest later than at many neighbouring properties. Its soils are gravel over clay and sand, and the vineyard is farmed as a single block, with a reputation for meticulous and sometimes nerve-testing timing at picking. Domaine de Chevalier is classified for both its red and its white in the Graves classification, one of a small number of estates to hold that double distinction, and it has been owned by the Bernard family since 1983. The red is built on Cabernet Sauvignon with Merlot and matured in barrel.
Serve at 17 to 18 degrees, decanted, with lamb, beef or game; this is a wine for the long haul and rewards fifteen years or more.
