Salade Niçoise (Niçoise Salad)
Ingredients:
- 200g green beans, trimmed
- 4 small potatoes, boiled and sliced
- 2 eggs, hard-boiled and halved
- 1 small red onion, thinly sliced
- 150g cherry tomatoes, halved
- 80g black olives
- 120g canned tuna, drained
- 4 anchovy fillets (optional)
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper, to taste

- Blanch green beans in boiling water for 2 minutes, then cool in ice water.
