Domaine des Croix Saint-Romain Combe Bazin 2021

Domaine des Croix Saint-Romain Combe Bazin is only the second release from this steep, stony site, and production will pause while the vineyard is replanted.

Saint-Romain sits high in a fold of the hills behind Meursault and Auxey-Duresses, and its altitude and shallow limestone soils make it one of the cooler white wine communes of the Côte de Beaune. Combe Bazin is a steep site on white soils, and Domaine des Croix works a single hectare there. The vines are in poor condition and yield very little, so David Croix is replanting with mass-selection cuttings; there will be a break in production after this release while the young vines mature. The grapes are lightly crushed, given a gentle three-hour press, then fermented with wild yeasts and aged for a year on lees in used 500-litre barrels, followed by six months in concrete. Croix describes the archetypal Combe Bazin as a Saint-Romain that fills out the palate.

Drinking well on release and good for four or five years. Serve at 10-12°C with grilled fish, roast chicken or a goat's cheese salad.
