Description
Domaine du Pélican Arbois Savagnin Macération Pelliculaire is a skin-contact white from the Jura, made from the region's signature grape.
Savagnin is the Jura's own variety and the grape behind vin jaune, the region's famous wine aged for years under a veil of yeast without topping up. This bottling takes a different route: macération pelliculaire means the juice is left in contact with the grape skins before pressing, a technique borrowed from red winemaking and applied to a white grape, drawing colour and tannin out of the skins. Domaine du Pélican was founded in Arbois in 2012 by Guillaume d'Angerville of Domaine Marquis d'Angerville in Volnay, who was struck by how closely the Jura's marls and limestones resemble those of the Côte d'Or across the Bresse plain.
Serve at around 12 to 14 degrees, cooler than a red but warmer than most whites, with Comté, cured meats or lightly spiced dishes.
