Lentil Stew

Ingredients:

  • 1 cup green lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup tomato passata
  • 4 cups vegetable stock
  • 1 tsp fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a pot and sauté onion, garlic, and carrots until softened.
  2. Add lentils, tomato passata, vegetable stock, and thyme. Bring to a boil.
  3. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  4. Season with salt and pepper before serving.
