Recipe

Zucchini and Ricotta Tart

Ingredients:

  • 1 sheet of puff pastry
  • 2 medium zucchinis, thinly sliced
  • 200g ricotta cheese
  • 1/4 cup Parmesan cheese, grated
  • 2 eggs
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 200°C. Line a tart pan with puff pastry and trim the edges.
  2. In a bowl, mix ricotta, eggs, Parmesan, salt, and pepper. Spread evenly over the pastry.
  3. Arrange zucchini slices over the ricotta mixture in a circular pattern.
  4. Brush zucchini with olive oil and bake for 25-30 minutes until golden brown.
  5. Serve warm, garnished with fresh herbs if desired.
