- 1 large onion, chopped

- 400g diced tomatoes (canned or fresh)

- 2 tbsp olive oil

- 1 tsp dried basil
- Salt and pepper, to taste

- Add the eggplant cubes and red bell pepper. Cook for about 8–10 minutes until the eggplant begins to soften and release its moisture.
- Stir in the diced tomatoes, dried oregano, and dried basil. Bring to a simmer and season with salt and pepper. Cover and let it cook on low heat for 20–25 minutes until the eggplant is tender and the flavors have melded together.
