Recipe

Herbed Wild Mushroom Risotto

Ingredients:

  • 300g Arborio rice
  • 200g mixed wild mushrooms, cleaned and sliced
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 litre vegetable broth, kept warm
  • 1/2 cup dry white wine (optional)
  • 2 tbsp olive oil
  • 1 tbsp vegan butter (or unsalted butter)
  • Salt and pepper, to taste
  • Fresh thyme, a few sprigs
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened, about 3 minutes.
  2. Add the wild mushrooms and a few sprigs of thyme, and cook for 5–7 minutes until the mushrooms release their moisture and begin to brown. Season lightly with salt and pepper.
  3. Add the Arborio rice to the pan, stirring well to coat the grains with oil. If using white wine, pour it in and stir until mostly absorbed.
  4. Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle. Continue this process for 18–20 minutes until the rice is creamy and al dente.
  5. Stir in the vegan butter and adjust seasoning with salt and pepper.
  6. Remove from heat, garnish with freshly chopped parsley, and serve immediately.
