Butternut Squash Risotto with Toasted Almonds
Ingredients:
- 400g Arborio rice
- 1 small butternut squash, peeled and diced into 1cm cubes
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 litre vegetable broth, kept warm
- 1/2 cup white wine (optional)
- 2 tbsp olive oil
- 1/3 cup toasted almonds, roughly chopped
- Salt and pepper, to taste
- Fresh sage leaves, for garnish
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3 minutes.
- Add the diced butternut squash and cook for another 5 minutes until it starts to soften.
- Stir in the Arborio rice and toast for 1–2 minutes until the rice is well-coated. If using white wine, pour it in now and allow it to absorb completely.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to absorb before adding the next ladle. Continue for 18–20 minutes until the rice is creamy and al dente and the squash is tender.
- Fold in the toasted almonds and season with salt and pepper to taste.
- Remove from heat and garnish with fresh sage and parsley. Serve immediately alongside a chilled glass of Domaine Feuillat-Juillot Corton Grand Cru Blanc 2022 for a sumptuous, terroir-driven pairing.
