Recipe

Butternut Squash Risotto with Toasted Almonds

Ingredients:

  • 400g Arborio rice
  • 1 small butternut squash, peeled and diced into 1cm cubes
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 litre vegetable broth, kept warm
  • 1/2 cup white wine (optional)
  • 2 tbsp olive oil
  • 1/3 cup toasted almonds, roughly chopped
  • Salt and pepper, to taste
  • Fresh sage leaves, for garnish
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3 minutes.
  2. Add the diced butternut squash and cook for another 5 minutes until it starts to soften.
  3. Stir in the Arborio rice and toast for 1–2 minutes until the rice is well-coated. If using white wine, pour it in now and allow it to absorb completely.
  4. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to absorb before adding the next ladle. Continue for 18–20 minutes until the rice is creamy and al dente and the squash is tender.
  5. Fold in the toasted almonds and season with salt and pepper to taste.
  6. Remove from heat and garnish with fresh sage and parsley. Serve immediately alongside a chilled glass of Domaine Feuillat-Juillot Corton Grand Cru Blanc 2022 for a sumptuous, terroir-driven pairing.
