Rustic Lentil and Roasted Vegetable Stew
Ingredients:
- 1 cup green lentils, rinsed
- 2 medium carrots, diced
- 1 parsnip, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 celery stalk, diced
- 400g diced tomatoes (canned or fresh)
- 2 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Toss the diced carrots and parsnip with 1 tbsp olive oil, salt, and pepper; roast on a baking sheet for 25 minutes until tender and slightly caramelized.
- In a large pot, heat the remaining olive oil over medium heat. Sauté the chopped onion and garlic until softened, about 3 minutes.
- Add the celery, roasted carrots and parsnip, diced tomatoes, vegetable broth, dried thyme, and bay leaf. Bring the mixture to a simmer and cook for 15–20 minutes until the lentils are tender and the flavors meld together.
- Remove the bay leaf and adjust seasoning with salt and pepper. Stir in freshly chopped parsley just before serving.
